Steps
1. Rinse quinoa thoroughly under cold water.
2. Cook quinoa in 2/3 cup water until fluffy, about 15 minutes, then set aside to cool.
3. In a small pan, heat olive oil and sauté onion and garlic until translucent.
4. In a bowl, combine cooled quinoa, sautéed onion and garlic, grated green apple, and sliced celery.
5. In a separate small bowl, whisk white wine with salt, pepper, and your chosen spices.
6. Pour the dressing over the quinoa mixture and toss gently to combine.
7. Adjust seasoning to taste and serve chilled or at room temperature.
