Steps

1. Preheat the oven to 375°F (190°C). 2. Slice the chicken breast horizontally to create a pocket, being careful not to cut all the way through. 3. In a small bowl, mix cream cheese with garlic powder, salt, and pepper. 4. Spread the cream cheese mixture inside the chicken pocket. 5. Place pickle slices inside the pocket over the cream cheese. 6. Close the chicken breast and secure with toothpicks if needed. 7. Heat olive oil in an oven-safe skillet over medium heat. 8. Sear the chicken breast for 2-3 minutes on each side until golden brown. 9. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked through. 10. Remove toothpicks and serve hot.
