Roasted Chicken with Grape and Thyme Sauce

Steps

1. Preheat your oven to 375°F (190°C). 2. Season the chicken breast with salt and pepper. 3. Heat olive oil in an ovenproof skillet over medium heat. 4. Sear the chicken breast for 2-3 minutes on each side until golden brown. 5. Remove chicken and set aside momentarily. 6. Add garlic to the skillet and sauté until fragrant, about 30 seconds. 7. Add grapes, chicken broth, and thyme leaves. Cook for 2 minutes. 8. Return chicken to the skillet, spoon some grape sauce over the top. 9. Transfer the skillet to the oven and roast for 12-15 minutes until the chicken is cooked through. 10. Remove from oven, let rest for 5 minutes before serving with the grape sauce spooned over.
