Steps
1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
2. Marinate the chicken breast in this mixture for at least 15 minutes.
3. Rinse quinoa under cold water, then cook with water in a small pot. Bring to boil, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
4. Preheat a grill pan or skillet over medium heat.
5. Grill the chicken breast for 5-7 minutes on each side or until fully cooked.
6. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, parsley, olive oil, and lemon juice. Mix well and season with salt and pepper.
7. Serve the grilled chicken alongside the quinoa salad.
