Steps
1. In a small pot, bring water or vegetable broth to a boil.
2. Add the oats, reduce heat to low, and simmer for about 5 minutes, stirring occasionally until creamy.
3. While oats cook, heat olive oil in a small pan over medium heat.
4. Add spinach and sauté for 2-3 minutes until wilted; season with salt and pepper.
5. In a separate pot, poach the egg by simmering water and gently cracking the egg into the water, cooking for 3-4 minutes until the white is set.
6. Stir sautéed spinach into the cooked oatmeal.
7. Serve oatmeal in a bowl, top with poached egg, and sprinkle with optional red pepper flakes or Parmesan cheese if desired.
