Mexican Chicken, Broccoli, and Spinach Quesadilla

Steps

1. Heat olive oil in a skillet over medium heat. 2. Add diced chicken, season with cumin, chili powder, salt, and pepper. Cook until chicken is browned and cooked through, about 5-6 minutes. 3. Add broccoli and spinach to the skillet and sauté for 2-3 minutes until vegetables are tender. 4. Remove the chicken and vegetable mixture from the skillet and set aside. 5. Place the tortilla in the same skillet over low-medium heat. 6. Sprinkle half of the cheese evenly on the tortilla. 7. Spread the chicken, broccoli, and spinach mixture over the cheese layer. 8. Top with the remaining cheese and cover with the other half of the tortilla or fold it over. 9. Cook for 2-3 minutes on each side or until the tortilla is golden brown and cheese is melted. 10. Remove from heat, slice into wedges, and serve with salsa and sour cream if desired.
