Steps
1. Place couscous in a bowl and pour boiling water over it. Cover and let it sit for 5 minutes to absorb the water.
2. Fluff the couscous with a fork to separate the grains.
3. Add diced cucumber, diced tomatoes, crumbled feta cheese, chopped mint, and parsley to the couscous.
4. Drizzle olive oil and lemon juice over the salad.
5. Season with salt and pepper to taste.
6. Toss everything gently to combine.
7. Chill in the refrigerator for 10 minutes before serving for extra freshness.
