Steps
1. Season the chicken breast with salt, pepper, and dried oregano.
2. Heat olive oil in a skillet over medium heat.
3. Add the chicken breast and cook for 5-6 minutes on each side until golden and cooked through.
4. Remove chicken from the skillet and set aside.
5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
6. Add halved olives and cherry tomatoes, cooking for 3-4 minutes until tomatoes soften.
7. Stir in lemon juice and fresh parsley.
8. Return the chicken to the skillet and spoon the olive and tomato mixture over the top.
9. Cook for another minute to combine flavors.
10. Serve hot with your choice of side.
