Steps
1. Prepare the Lontong:
- Rinse the rice under cold water until the water runs clear.
- Combine the rice and water in a pot. Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes until the rice is tender.
- Once cooked, let it cool slightly, then mold it into a log shape and wrap it in banana leaves or plastic wrap. Refrigerate for at least 30 minutes to firm up.
2. Make the Curry:
- In a pan, heat the vegetable oil over medium heat.
- Sauté the chopped onion, garlic, and ginger until fragrant and the onion is translucent.
- Stir in the curry powder and cook for another minute.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the mixed vegetables and cook for about 5-7 minutes until they are tender. Season with salt to taste.
3. Serve:
- Unwrap the rice cake and slice it into rounds.
- Place the sliced lontong in a bowl and ladle the hot curry over it.
- Garnish with fresh cilantro and serve hot.
