Steps

1. Heat the vegetable oil in a pan over medium heat. 2. Add the minced garlic and diced onion, and sauté until fragrant and golden. 3. Stir in the mixed vegetables and cook until tender. 4. Push the vegetables to one side of the pan, and crack the egg on the other side. Scramble the egg until fully cooked. 5. Add the cooked rice, soy sauce, sweet soy sauce, salt, and pepper. Stir everything together until well combined and heated through. 6. Serve hot, garnished with cucumber and tomato slices. Add chili paste if desired for extra heat.
