Herb-Roasted Rabbit with Garlic and Thyme

Steps

1. Preheat oven to 375°F (190°C). 2. Pat the rabbit dry and season with salt, pepper, minced garlic, and thyme. 3. Heat olive oil in an oven-safe skillet over medium-high heat. 4. Sear the rabbit on all sides until golden brown, about 3-4 minutes per side. 5. Add the sliced carrot and onion around the rabbit in the skillet. 6. Pour the white wine or chicken broth into the skillet. 7. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 160°F (71°C). 8. Remove from the oven and let rest for 5 minutes before serving. 9. Serve with the roasted vegetables and pan juices.
