Herb-Crusted Lamb Chops with Garlic Mashed Potatoes

Steps

1. Preheat oven to 200°C (390°F). 2. In a small bowl, mix minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the herb mixture all over the lamb chop. 4. Heat olive oil in an oven-safe pan over medium-high heat. 5. Sear the lamb chop for 2-3 minutes on each side until browned. 6. Transfer the pan to the oven and roast for 6-8 minutes for medium rare. 7. Meanwhile, boil potatoes in salted water until tender, about 15 minutes. 8. Drain potatoes and mash with butter, milk, and minced garlic until smooth. 9. Rest the lamb chop for 5 minutes before serving. 10. Plate the lamb chop with a side of garlic mashed potatoes and enjoy.
