Steps
1. Preheat oven to 375°F (190°C).
2. Butterfly the chicken breast by slicing it horizontally to create a pocket.
3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
4. Add diced apple and thyme, cook for 3-4 minutes until softened.
5. Remove from heat and mix in cream cheese, salt, and pepper.
6. Stuff the chicken breast with the apple mixture and secure with toothpicks.
7. Season the outside of the chicken with salt and pepper.
8. Place the stuffed chicken breast on a baking sheet and bake for 25-30 minutes until chicken is cooked through.
9. Let rest for 5 minutes before serving.
