Steps
1. In a bowl, combine minced lemongrass, garlic, fish sauce, soy sauce, brown sugar, ground coriander, white pepper, and vegetable oil.
2. Add chicken pieces to the marinade and mix well. Cover and refrigerate for at least 1 hour.
3. Preheat grill or grill pan to medium-high heat.
4. Thread marinated chicken pieces onto soaked wooden skewers.
5. Grill skewers for 3-4 minutes per side or until chicken is cooked through and lightly charred.
6. Serve hot with sweet chili dipping sauce on the side.
