Steps

1. Heat the vegetable oil in a wok or large skillet over medium-high heat. 2. Add the minced garlic and chopped shallot, stir-fry until fragrant and golden. 3. Add the sliced pork and cook until browned and cooked through. 4. Push the pork to one side of the wok, crack the egg into the empty side, and scramble it lightly. 5. Add the cooked jasmine rice, breaking up any clumps, and stir everything together. 6. Season with soy sauce, fish sauce, and sugar, mixing well to combine. 7. Stir in chopped spring onion and cook for another minute until everything is heated through. 8. Plate the fried rice on a clean white dish, garnish with fresh cilantro leaves, and serve with a lime wedge on the side.
