Steps

1. Heat the vegetable oil in a wok or large frying pan over medium-high heat. 2. Add minced garlic and shallot, stir-fry until fragrant (about 30 seconds). 3. Add sliced pork and cook until browned and cooked through. 4. Push pork to the side, crack in the egg and scramble until just set. 5. Add the cooked jasmine rice, breaking up any clumps, and stir-fry to combine with pork and egg. 6. Stir in soy sauce, fish sauce, oyster sauce, and sugar; mix well to evenly coat the rice. 7. Toss in sliced red chili and spring onions, stir for another minute. 8. Remove from heat and garnish with fresh cilantro leaves. 9. Serve hot on a clean white plate with a lime wedge on the side.
