Steps
1. Rinse quinoa under cold water.
2. In a small pot, combine quinoa with 2/3 cup water. Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes until water is absorbed.
3. While quinoa cooks, heat olive oil in a pan over medium heat.
4. Add onion and garlic; sauté until translucent.
5. Stir in cumin, smoked paprika, and chili powder; cook for 1 minute until fragrant.
6. Add black beans, diced tomatoes, and corn; cook for 5 minutes until heated through.
7. Mix cooked quinoa into the bean mixture; season with salt, pepper, and lime juice.
8. Serve hot, garnished with fresh cilantro.
