1. In a bowl, whisk the eggs with salt and pepper until well combined. 2. Heat the olive oil in a non-stick skillet over medium heat. 3. Add the chopped spinach and sauté for 1-2 minutes until wilted. 4. Pour the whisked eggs over the spinach, tilting the pan to spread them evenly. 5. Cook for about 2-3 minutes until the eggs start to set. 6. Sprinkle crumbled feta cheese over one half of the omelette and fold the other half over. 7.
