Herb-Crusted Lamb Chops with Garlic Yogurt Sauce

Steps

1. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. 2. Rub the herb mixture all over the lamb chops and let marinate for at least 15 minutes. 3. Heat a skillet over medium-high heat and sear lamb chops for 3-4 minutes on each side for medium-rare. 4. While lamb cooks, mix Greek yogurt with lemon juice, garlic, and parsley to make the sauce. 5. Remove lamb from skillet and let rest for 5 minutes. 6. Serve lamb chops with a dollop of garlic yogurt sauce on top or on the side.
