Steps
1. Preheat the oven to 400°F (200°C).
2. Pat the chicken thigh dry and season both sides with salt, pepper, smoked paprika, and garlic powder.
3. Heat olive oil in an oven-safe skillet over medium-high heat.
4. Place the chicken thigh skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
5. Flip the chicken thigh and cook for another 2 minutes.
6. Brush the top of the chicken with the berry jam evenly.
7. Add fresh thyme or rosemary on top if using.
8. Transfer the skillet to the oven and bake for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
9. Remove from oven and let rest for 5 minutes before serving.
