Steps
1. In a saucepan, bring the vegetable broth to a boil.
2. Add the whole grain cereal to the boiling broth and reduce heat to a simmer. Cook for about 5 minutes until the cereal is tender.
3. In a separate pan, heat olive oil over medium heat and sauté the fresh spinach until wilted (about 2-3 minutes).
4. In the same pan, poach the egg to your preferred doneness.
5. Once the cereal is cooked, season with salt, pepper, and optional chili flakes.
6. Serve the cereal in a bowl, topped with the sautéed spinach and poached egg.
