Steps

1. Rinse the quinoa under cold water. 2. In a small pot, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium heat. 3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. 4. While the quinoa is cooking, chop the mixed nuts and vegetables. 5. In a bowl, combine the cooked quinoa, nuts, cherry tomatoes, and cucumber. 6. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine. 7. Garnish with fresh parsley before serving.
