Longan and Peanut Pork Rib Soup

Steps

1. Rinse the pork ribs under cold water and pat dry. 2. In a pot, bring 2 cups of water to a boil. Add the pork ribs and ginger, and simmer for 10 minutes to remove impurities. 3. Drain the ribs and set aside. 4. In the same pot, add the cleaned ribs, dried longan, roasted peanuts, and 2 cups of fresh water. 5. Bring to a boil, then reduce heat and let simmer for 40 minutes. 6. Add salt to taste and garnish with chopped green onions before serving.
