Fresh Coriander and Tomato Soup with Dried Lemon

A vibrant and tangy soup combining fresh coriander, ripe tomatoes, and the unique citrusy flavor of dried lemon. This comforting dish offers a refreshing twist on traditional tomato soup.

Steps

1. Heat olive oil in a pot over medium heat. Add the chopped onion and garlic, sauté until translucent. 2. Add the chopped tomatoes and cook for 5 minutes until they soften. 3. Pour in the vegetable broth and add the pierced dried lemon. Bring to a boil. 4. Reduce heat and simmer for 20 minutes to allow flavors to meld. 5. Remove the dried lemon from the pot. 6. Use an immersion blender to puree the soup until smooth. 7. Stir in fresh coriander and lemon juice, then season with salt and pepper. 8. Simmer for another 2 minutes and serve hot, garnished with extra coriander if desired.
