Steps

1. Preheat the oven to 200°C (400°F). 2. In a small bowl, mix together the lemon juice, lemon zest, olive oil, minced garlic, thyme, rosemary, salt, and pepper. 3. Place the chicken in a roasting pan and pour the marinade over it, making sure to coat it evenly. 4. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 75°C (165°F) and the skin is golden and crispy. 5. Remove the chicken from the oven and let it rest for 10 minutes before carving. 6. Serve the lemon herb roasted chicken with your choice of sides.
