Lemon Herb Roast Chicken

Steps

1. Preheat your oven to 200°C (400°F). 2. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the chicken leg thoroughly with the herb and olive oil mixture. 4. Place the chicken in a small roasting pan, and arrange lemon slices on and around the chicken. 5. Roast in the oven for 35-40 minutes, or until the internal temperature reaches 75°C (165°F) and the skin is golden and crispy. 6. Remove from oven and let rest for 5 minutes. 7. Garnish with fresh parsley before serving if desired.
