1. Heat olive oil in a non-stick skillet over medium heat. 2. Add diced tomato and sauté for 2 minutes until slightly softened. 3. Add chopped spinach and cook until wilted, about 1-2 minutes. 4. Crack eggs into a bowl, season with salt and pepper, and whisk lightly. 5. Pour eggs over the spinach and tomato mixture in the skillet. 6.
