Steps
1. Preheat your oven to 180°C (350°F).
2. In a small bowl, mix olive oil, minced garlic, thyme, lemon juice, salt, and pepper.
3. Rub the mixture thoroughly over the rabbit meat.
4. Place the rabbit in a small baking dish and add the rosemary sprig on top if using.
5. Roast in the preheated oven for 35-40 minutes, or until the meat is cooked through and tender.
6. Remove from the oven and let rest for 5 minutes before serving.
