Steps
1. Preheat the oven to 375°F (190°C).
2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, lemon juice, salt, and pepper.
3. Rub the rabbit leg thoroughly with the herb and garlic mixture.
4. Place the rabbit in a roasting pan and roast in the oven for 35-40 minutes, turning halfway through, until the meat is cooked through and golden.
5. Remove from oven and let rest for 5 minutes.
6. Garnish with fresh parsley and serve warm.
