Herb-Crusted Turkey Breast with Roasted Vegetables

Steps

1. Preheat oven to 200°C (400°F). 2. In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper. 3. Rub the turkey breast with the herb mixture evenly. 4. Place turkey breast on a baking tray. 5. Chop mixed vegetables into bite-sized pieces, toss with a little olive oil, salt, and lemon juice. 6. Spread vegetables around the turkey on the tray. 7. Roast in the oven for 25 minutes or until the turkey reaches an internal temperature of 74°C (165°F). 8. Let the turkey rest for 5 minutes before slicing. 9. Serve the sliced turkey with the roasted vegetables.
