Steps
1. Preheat the oven to 200°C (400°F).
2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
3. Rub the herb mixture evenly over the turkey breast.
4. Place the turkey breast on a baking tray.
5. Toss the carrots, zucchini, and cherry tomatoes with olive oil, salt, and pepper.
6. Arrange the vegetables around the turkey on the tray.
7. Roast in the oven for 25-30 minutes, or until the turkey reaches an internal temperature of 75°C (165°F) and vegetables are tender.
8. Let the turkey rest for 5 minutes before slicing and serving with the roasted vegetables.
