Steps

1. Preheat your oven to 400°F (200°C). 2. Wash and peel the potato, then slice it thinly (about 1/8 inch thick). 3. In a bowl, combine olive oil, garlic powder, thyme, rosemary, salt, and pepper. 4. Toss the potato slices in the herb mixture until well coated. 5. Arrange half of the potato slices in a stack on a baking sheet lined with parchment paper. 6. Sprinkle with half of the parmesan cheese (if using) and layer the remaining potato slices on top. 7. Drizzle any leftover herb mixture over the top and add the rest of the parmesan cheese. 8. Bake for 25-30 minutes until golden brown and crispy. 9. Garnish with fresh parsley before serving.
