Hearty Beef and Vegetable Pot Pie

A comforting pot pie filled with tender beef, carrots, and potatoes, all enveloped in a flaky homemade flour crust. Perfect for a filling single-serve meal with classic flavors.

Steps

1. Preheat oven to 200°C (400°F). 2. Heat olive oil in a pan over medium heat. Add diced beef and cook until browned. 3. Add diced carrots and potatoes to the pan and cook for 5 minutes. 4. Sprinkle 20g of flour over the mixture, stirring to coat and cook for 1 minute. 5. Add water gradually, stirring continuously to form a thick filling. Season with salt, pepper, and thyme. Remove from heat. 6. In a bowl, mix remaining flour with butter and a pinch of salt. Add water slowly and knead until a smooth dough forms. 7. Roll dough out to fit a small baking dish. 8. Pour the beef and vegetable filling into the dish and cover with the dough. 9. Bake for 20-25 minutes or until crust is golden brown. 10. Let cool slightly before serving.
