Steps

1. Heat olive oil in a skillet over medium heat. 2. Add minced garlic and grated ginger; sauté for 1 minute until fragrant. 3. Add sliced carrots and cook for 5 minutes, stirring occasionally, until they start to soften. 4. Stir in the chickpeas and cook for another 3 minutes. 5. Mix honey (or maple syrup) with soy sauce and pour over the vegetables. 6. Stir well and cook for 2 more minutes until carrots are tender and the sauce thickens slightly. 7. Season with salt and pepper to taste. 8. Garnish with fresh parsley or cilantro before serving.
