Steps
1. Rinse the rice under cold water until water runs clear.
2. In a small pot, bring water or chicken broth to a boil. Add rice, lemon zest, and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
3. While rice cooks, season the chicken breast with salt, pepper, thyme, and rosemary.
4. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
5. Add chicken breast to the skillet and cook for about 6-7 minutes per side until golden brown and cooked through.
6. Remove chicken from heat and squeeze lemon juice over it.
7. Fluff the cooked rice with a fork and stir in a little olive oil if desired.
8. Serve the chicken on top of the lemon rice, garnish with fresh parsley if available.
