Colombian Beef and Cheese Stuffed Peppers with Rice

A healthy twist on a traditional Colombian dish featuring lean beef and cheese stuffed bell peppers served over a bed of seasoned rice. This balanced meal combines protein, veggies, and grains for a nutritious and flavorful main course.

Steps

1. Preheat the oven to 180°C (350°F). 2. Cut the top off the bell pepper and remove seeds and membranes. 3. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant. 4. Add ground beef, cook until browned, seasoning with salt and pepper. 5. Stir in diced tomato and cook for 2 more minutes. 6. Remove from heat and mix in half of the cheese. 7. Stuff the bell pepper with the beef mixture and place in a small baking dish. 8. Sprinkle the remaining cheese on top of the stuffed pepper. 9. Bake for 20-25 minutes until the pepper is tender and cheese is melted. 10. Serve the stuffed pepper on a bed of warm cooked brown rice. 11. Garnish with fresh cilantro and enjoy.
