Steps

1. Preheat the oven to 350°F (180°C). 2. In an oven-safe skillet, heat olive oil over medium heat. 3. Add the sliced potatoes and cook until golden brown and crispy. 4. Add the diced peppers and cook until slightly softened. 5. In a bowl, whisk the eggs and season with salt and pepper. 6. Pour the eggs over the potatoes and peppers in the skillet. 7.
