Banana Blueberry Oat Pancakes

Steps

1. In a bowl, mash the ripe banana until smooth. 2. Add the egg white, Greek yogurt, and vanilla extract to the mashed banana and mix well. 3. In a separate bowl, combine oat flour, baking powder, cinnamon, and salt. 4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. 5. Gently fold in the fresh blueberries. 6. Heat a non-stick skillet over medium heat and lightly grease if desired. 7. Pour batter onto the skillet to form small pancakes and cook for 2-3 minutes until bubbles appear on the surface. 8. Flip carefully and cook for another 2 minutes until golden brown. 9. Serve warm with optional honey or maple syrup drizzled on top.
