Tomato Basil Stuffed Chicken Breast

Steps

1. Preheat the oven to 375°F (190°C). 2. Slice a pocket into the side of the chicken breast, being careful not to cut all the way through. 3. In a small bowl, mix diced tomato, chopped basil, minced garlic, and mozzarella cheese. 4. Stuff the tomato mixture into the chicken pocket. 5. Season the outside of the chicken breast with salt and pepper. 6. Heat olive oil in an oven-safe skillet over medium heat. 7. Sear the chicken breast for 2-3 minutes on each side until golden brown. 8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through. 9. Remove from oven and let rest for 5 minutes before serving.
