Steps

1. Preheat the oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds and membranes. 3. In a bowl, mix the cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper. 4. Drizzle olive oil inside the bell pepper and then carefully stuff it with the quinoa mixture. 5. Place the stuffed pepper in a baking dish and cover it with foil. 6. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes. 7. If desired, sprinkle cheese on top and return to the oven until melted. 8. Garnish with fresh cilantro before serving.
