Steps
1. Preheat oven to 350°F (175°C).
2. In a bowl, whisk egg and sugar until light and fluffy.
3. Add melted butter and yellow food coloring, mix well.
4. Sift in flour and baking powder, fold gently to combine.
5. Pour batter into a greased small square baking pan or silicone mold (about 4x4 inches) to get a sponge-like cookie.
6. Bake for 10-12 minutes until lightly golden and springy.
7. Let sponge cool completely, then cut into SpongeBob shapes (rectangle with a face).
8. Use royal icing to decorate SpongeBob’s face and clothes; add mini chocolate chips for eyes.
9. For Patrick, take Lotus Biscoff cookies and use pink royal icing to pipe the starfish body and face.
10. Use edible marker or melted chocolate to draw eyes and mouth on Patrick.
11. Add white icing dots for eye highlights.
12. Let all icing dry for at least 30 minutes before serving.
