1. Preheat your oven to 400°F (200°C). 2. Wash and thinly slice the potato into even rounds. 3. Soak the slices in cold water for 15 minutes to remove excess starch, then pat dry thoroughly. 4. In a bowl, mix olive oil with cayenne pepper, smoked paprika, chili powder, garlic powder, and salt. 5. Toss the potato slices in the spicy oil mixture until evenly coated. 6. Arrange the slices in a single layer on a baking sheet lined with parchment paper. 7. Bake for 15-20 minutes, flipping halfway, until chips are crispy and golden. 8. Remove from oven and let cool slightly before serving.
