Steps
1. Heat oil in a pan over medium heat.
2. Add sliced onions and grated ginger, sauté until fragrant and onions are translucent.
3. Add diced potatoes, season with salt and pepper, and cook until they start to soften, about 8-10 minutes.
4. Stir in chopped tomato and cook for another 3 minutes until the tomato softens.
5. Push the vegetables to one side of the pan and crack the egg into the empty side.
6. Scramble the egg gently, then mix everything together.
7. Cook for another 2 minutes until the egg is fully cooked.
8. Adjust seasoning and optionally add chili flakes.
9. Serve hot.
