Steps
1. Preheat the oven to 190°C (375°F).
2. In a small bowl, mix olive oil, minced garlic, chopped rosemary, lemon juice, salt, and pepper.
3. Rub the rabbit meat thoroughly with the herb mixture.
4. Place the rabbit in a baking dish; optionally surround with baby potatoes or vegetables.
5. Roast in the oven for 35-40 minutes, turning once halfway through, until the meat is cooked through and slightly golden.
6. Remove from oven and let rest for 5 minutes before serving.
7. Serve warm with roasted vegetables or a fresh side salad.
