Soy-Yogurt Chicken Stir Fry w/ Rice

This light and healthy stir fry is packed full of flavour thanks to its delicious mix of soy, yogurt and chicken.

Steps

1. Start by preparing the ingredients. Place the cubed chicken in a medium bowl and season with a pinch of salt and pepper. Slice or dice the onions and place them aside. 2. Heat a large skillet over medium-high heat with 1 teaspoon of olive oil. Add the chicken to the skillet and cook for 4-5 minutes, flipping the chicken halfway through. Once chicken is cooked through, transfer it to an individual plate. 3. Add onions and another teaspoon of olive oil to the same skillet and cook for 2-3 minutes, stirring occasionally. 4. Add uncooked rice to the skillet and stir everything together until the rice is well-mixed in with the onions. Pour soy sauce and yogurt over the top of the rice, stirring constantly. 5. Finally, add the cooked chicken back into the skillet and stir everything together until it is well-combined. Cook for 2-3 minutes or until the rice is cooked through. 6. Serve warm and enjoy!
