Steps
1. Season the sirloin steak with salt and pepper on both sides.
2. Heat olive oil or butter in a skillet over medium-high heat.
3. Add the steak to the skillet and cook for 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest for 5 minutes.
4. In the same skillet, reduce heat to medium and crack the eggs into the pan. Cook until the whites are set but the yolks remain runny, about 3-4 minutes.
5. Slice the steak and serve it on a plate, topped with the sunny-side-up eggs. Garnish with fresh herbs if desired.
