In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat the butter in a non-stick skillet over medium heat until melted.
Pour the egg mixture into the skillet, tilting the pan to distribute evenly.
As the eggs begin to set, gently lift the edges with a spatula, allowing the uncooked eggs to flow to the edges.
Once the eggs are mostly set, sprinkle the diced ham and shredded cheese on one half of the omelette.
Fold the other half over the filling and let it cook for another minute until the cheese is melted.
Slide the omelette onto a plate and garnish with fresh herbs if desired.
