Steps

1. In a bowl, whisk the eggs with a pinch of salt and pepper until well combined. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Add chopped spinach to the skillet and sauté for 1-2 minutes until wilted. 4. Pour the beaten eggs over the spinach, tilting the pan to spread them evenly. 5. Cook for 2-3 minutes until the edges begin to set. 6. Sprinkle crumbled feta cheese and red pepper flakes (if using) over half of the omelette. 7. Carefully fold the omelette in half and cook for another minute until the cheese melts and the eggs are fully cooked. 8. Slide onto a plate and serve warm.
