Steps
1. Rinse quinoa under cold water.
2. In a small pot, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
3. While quinoa cooks, heat olive oil in a pan over medium heat.
4. Add minced garlic and sauté for 1 minute.
5. Add sliced mushrooms, cook for 5-7 minutes until soft.
6. Add fresh spinach and cook until wilted, about 2 minutes.
7. Season mushroom and spinach mixture with salt, pepper, and lemon zest.
8. Fluff cooked quinoa with a fork and stir in lemon juice.
9. Combine quinoa with mushroom and spinach mixture.
10. Optional: sprinkle with grated Parmesan cheese before serving.
