Steps
1. Rinse quinoa under cold water.
2. In a small pot, combine quinoa and water; bring to a boil.
3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
4. While quinoa cooks, heat olive oil in a skillet over medium heat.
5. Add minced garlic and sauté for 1 minute until fragrant.
6. Add sliced mushrooms and cook for 5-7 minutes until soft.
7. Stir in spinach and thyme, cooking until spinach wilts.
8. Season with salt and pepper to taste.
9. Fluff cooked quinoa with a fork and combine with the mushroom-spinach mixture.
10. Serve warm, optionally topped with grated Parmesan cheese.
